Moss grows from the walls and the kitchen tells of the rooting of culinary arts with nature. Terra tells of the rooting of culinary arts with nature. We bring this story to the plates with a menu. The "Terra" menu consists of seven plates – it is framed by numerous small dishes and snacks. Even the opening shows that we break common conventions in "Terra": Guests are welcomed with the outgrowths of a braised salsify and black garlic, accompanied by the reddish shimmering healing water from the nearby spring of Bad Sauerbrunn – an earthy start with bold sulfur and iron aromas. Again and again, seemingly unusual combinations are drawn upon, which then prove to be remarkably flavorful. For example, a light-footed homage to Styria, where pumpkin and pumpkin seed oil harmonize successfully with fruity components such as blueberry and green strawberry.
