The Dillinger - Sabathihof family winery in southern Styria is known for its hand-picked wines, which impress with their unmistakable character and deep roots in the region.

The wines reflect the special conditions of the steep, south-facing vineyards, whose soils consist of sand and opok. This special origin gives the wines their depth and complexity. The varietal diversity of Dillinger wines is clearly defined by their geographical location, and each bottle bears the unmistakable signature of the terroir.

The estate's wines are not only of high quality, but also certified as sustainable. They are produced in accordance with the strictest ecological and social standards. Florian Dillinger, the estate's young winemaker, focuses on a close connection to nature and ensures that resources are treated with respect and care. His approach is to give the wines space and time to develop naturally, without artificial intervention. Instead of pushing the wines in a certain direction, he encourages and accompanies their development so that they retain their unique character.

The focus of our work is on quality, which begins in the vineyard. By deliberately limiting the yield and carefully selecting the optimum time for harvesting, we ensure that only the best grapes reach the cellar. There, the wines are given the necessary rest and ripening time to develop their full potential. The winemaker intervenes only minimally in the ripening process so as not to manipulate the style of the wine. This philosophy of naturalness and authenticity ensures that the wines of the Dillinger winery retain their identity and reflect the unique character of their origin, which is why Dillinger wines proudly bear the Dillinger label.
 
Dillinger wines proudly bear the heritage of a long family tradition, combined with the innovative strength and vision of the young winemaker. They embody the essence of the southern Styrian landscape - fertile, diverse and graceful - and carry this out into the world.
