The cheese is made from raw milk according to Swiss alpine tradition.
Milk production on the leased farm (6 hectares of grassland) in Sulzgraben. 6 cows are kept. In summer only grazing, in winter hay feeding. The products made are: Hochschwab cheese Alpador (various degrees of ripeness), smoked cheese and St. Ilgen cheese. Sale directly at the farm in St. Ilgen 91 (approx. 350m after the church; signposted)
