Grazer Krauthäuptel is one of Styria’s best-known lettuce specialties. It is recognised by its mild, slightly sweet flavour and its characteristic reddish-purple leaf edge.
The lettuce is grown mainly in and around Graz as well as in parts of southern and eastern Styria, where fertile soils and the region’s mild climate provide ideal growing conditions.
A regional delicacy with tradition
Closely linked to Styria, Grazer Krauthäuptel has long been part of the region’s culinary heritage. The variety was first documented in the early 20th century and soon became an established part of vegetable production around Graz.
Grazer Krauthäuptel is a protected brand and may only be cultivated in designated growing areas within Styria. Around 100 farmers grow it according to defined quality standards, primarily in the Graz region and parts of south-eastern Styria.
The first recorded mention of Grazer Krauthäuptel in the Austrian seed register dates back to 1913.
Cultivation and Harvest
More than 15 million heads of Grazer Krauthäuptel are harvested each year. Its delicate leaf structure and high water content make it particularly fresh, crisp and light.
In Styrian cuisine, it is traditionally served as a salad, often dressed with Styrian pumpkin seed oil, apple cider vinegar and a pinch of salt. Thanks to its mild flavour, it also complements modern seasonal dishes.
