The chicken meat for connoisseurs
Patrick's great childhood love was his two roosters Albert and Friedl, and later he also fell in love with Katharina, with whom he now operates his chicken farm in Petersdorf. Patrick liked chickens, especially his, so much that he spent a lot of time during his studies researching them. On a research trip to Canada during his doctorate, he encountered large experimental facilities like he had never seen before. When he returned to Austria, Patrick worked for a large animal welfare organization, shortly thereafter he fulfilled his big shared dream with his wife Kathi, a organic chicken farm in Petersdorf near Fehring in the Thermal and Volcanic Region of Styria.
The breed - with which they mainly work - Bresse Gauloise, comes from the eponymous French province and is valued worldwide for its meat quality. What Kobe beef is for beef lovers, the Bresse chicken is in a way for true chicken gourmets. For the wonderful taste, both the genetics and the slow growth and diverse feeding are crucial. The chickens of Kathi and Patrick Birkl eat everything that the Styrian orchards around their farm provide. Therefore, their menu changes with the seasons between seasonal herbs, nuts, fruits, and insects. Although the quality chickens are raised similarly to those in France, the two completely forgo cages, let their animals out into the open every day, and farm their chicken farm organically.
Kathi and Patrick are always very excited to welcome visitors who want to see and experience how they work. The poulet is also sold at selected times of the year - directly from the farm or by post throughout Austria.
